Brewing and Distillation Technology Certificate

This program is intended for those who are interested in starting a career in brewing, expanding their current brewing knowledge and practice, or considering opening a brewpub or microbrewery. The curriculum has been designed with direct input and participation by brewing professionals, owners of breweries and brewpubs, and distillers. The program is designed by craft beverage professionals to meet industry needs and also addresses potential issues faced by entrepreneurs aspiring to start a microbrewery or brewpub in Michigan. The course of study introduces the science, operation, business, finishing, packaging, sensory evaluation, draught system management, and service of beer and distilled spirits, and prepares the student to pursue employment in a wide variety of positions in a craft beverage operation.

Students who satisfactorily complete the program requirements qualify for a certificate of program completion.

Program Outcomes

  • Explain all steps of the brewing and distillation processes, including raw materials processing.
  • Identify and safely use common brewing equipment and instrumentation.
  • Specify, order and properly handle and prepare common brewing ingredients.
  • Explain mashing schedules and their effect on the finished product.
  • Develop, evaluate, document and scale brewing recipes.
  • Perform evaluations for major beer style categories, and detect faults and defects.
  • Practice safety, cleaning and sanitation procedures using the proper equipment and processes.
  • Solve equations related to technical and business functions of commercial brewing and distillation operations.
  • Perform finishing, filtration, carbonation and packaging of the finished product.
  • Outline the 3-Tier System and Control State structure
  • Demonstrate the technical skills required to market a craft beverage operation.
  • Interpret state and federal regulations related to brewing and distilling.
  • Perform proper beer service.
  • Practice draft system management.
  • Perform quality control procedures for fermented or distilled beverage production.
  • Assess customer needs and preferences to build positive relationships and customer loyalty.
  • Explain economic, environmental, and social aspects of the craft beverage business central to responsible and sustainable operations.
  • Demonstrate professional conduct by displaying positive work ethics, teamwork skills, and safe procedures.
